Don't cut fat — swap it.

The protocol
- Oils: cook with non-tropical vegetable oils that are lower in saturated fat, such as olive, canola or sunflower oil.
- Fish: choose non-fried fish as a regular protein.
- Swap: replace some of the meat you eat with beans, legumes, fish or nuts; if you eat meat, choose lean cuts and poultry without skin.
- Snack: a small handful of unsalted nuts or seeds.
- Labels: read the Nutrition Facts panel and ingredient list to compare saturated fat, sodium and added sugars.
- Avoid the trap: do not swap saturated fat for refined carbohydrates such as sugary cakes and cookies; whole grains and unsaturated fats are the better replacement.
- Duration: ongoing.
What you get
- The AHA states that replacing foods high in unhealthy fats with unsaturated fats can lower the risk of heart disease.
- The swap keeps fat in the diet, which the AHA recommends over a low-fat approach.
Contraindications
- Replacing saturated fat with refined carbohydrates does not help; this is a swap, not a cut.
Evidence level
High. This is the American Heart Association's own dietary guidance, set out across its pages on saturated fat and on fats in food. The point it makes most firmly is the one most often missed: what replaces the saturated fat decides whether the change helps.
